Two simple dishes to keep Christmas delicious for Mater employees
– without the stress
Christmas cooking doesn’t have to be complicated4especially for those working long shifts in the hospital over the festive
season. These three quick, comforting recipes are designed to be manageable, delicious, and festive, even when time and
energy are limited. A bonus no-fuss mince-pie method makes this menu perfect for sharing with colleagues or enjoying at
home after a busy day.
Main Course:
One-Tray Christmas Chicken
A simplified alternative to turkey that still delivers all
the festive flavour.
Ingredients:
4 chicken thighs (skin on)
12 baby potatoes
2 carrots, sliced
1 red onion, cut into wedges
handful of Brussels sprouts
2 tbsp cranberry sauce
1 tbsp wholegrain mustard
Method:
Place all ingredients on a single tray, toss with olive oil,
salt, and pepper. Roast at 190°C for 45 minutes,
brushing the chicken with cranberry and mustard
halfway through. The result: golden, juicy chicken and
vegetables cooked in one go4minimal washing up
required.
Pudding:
Five-Minute Baileys
Chocolate Pots
Luxurious, impressive, and
unbelievably quick.
Ingredients:
150g dark chocolate
150ml double cream
132 tbsp Baileys (optional)
Method:
Melt the chocolate gently, stir
in warm cream and Baileys,
pour into small glasses, and
chill. Top with grated
chocolate. Perfect for a wellearned treat.
